Earlier in the month, I announced the new series I'm introducing to the blog, and that is 'The Rutland Blogger Recipes'. As a keen cook and baker, I've always enjoyed experimenting in the kitchen.

I asked the readers what they would like to see covered on the blog, and you guys said recipes and food ideas. So, I've launched 'The Rutland Blogger Recipes' - enjoy!

To begin, I thought as it's summer, why not share a quick and easy BBQ snack or dinner party finger-food idea that I love! Whether you enjoy experimenting in the kitchen too, or you'd like an idea for an upcoming BBQ or party, then this could be an affordable and easy-to-do recipe that suits you.

Wholemeal Pitta Chips with Hummus and Avocado Guac Dips.

So, for the first finger-food recipe I'm going to share one of my favourites that is super simple to recreate, as well as being healthy and delicious; Wholemeal Pitta Chips with Humous & Guacamole.

Step-by-step Recipe:

Ingredients: (Serves 2-4)
1 x Avocado
1 x Pot of Low Fat Hummus
2 x Wholemeal Pitta Breads
A pinch of Chilli Flakes
Squeeze of a Lemon
2 x Splashes of Chilli Oil
Rosemary (Optional)
A pinch of Salt
A pinch of Pepper


Step 1: Preheat fan oven to 180°C and arrange ingredients.

Step 2: Cut, slice and smash an avocado into a large mug with a pinch of salt, a pinch of pepper, sprinkle of chilli flakes, squeeze of lemon and a splash of chilli oil and bring together to a lumpy paste (Guacamole).

Step 3: Take 2 pitta breads and break both in half. Pull apart into triangular pieces.

Step 4: Place pitta pieces onto a baking tray and spalsh with olive oil, a pinch of salt and pepper and add rosemary (optional) and bake for around 8-10 minutes until crisp.

Step 5: Remove pittas from oven and place into bowl, spoon hummus and guacamole into a separate bowl and enjoy!


This simple and healthy snack is perfect and inexpensive, and perfect to enjoy in the summer in the garden with a beer!
